For something a little different, try Vector Dream. It was discontinued in 1998, but still does a few cool things. It was the first emulator to use backdrop artwork, and the first to have a proper vector effect. Remember playing an older Asteroids, and the "1 Coin 1 Play" was burned into the monitor? You can do that, too.
Radikal Bikers Emulator
To quote Aaron Giles' website:
"If you think Radikal Bikers is a cool game and wanted to see what it was like running full speed, here is a little standalone emu I whipped up. It was just a fun side project to learn Direct3D 8 and to see if some static recompilation techniques I've been thinking about would work. It's not super-polished, but it works well enough to play a few games. You need at least 2GHz and a 64MB video card to get full speed."

Kawaks (at CPS2Shock)
Kawaks is another emulator that does NeoGeo/CPS2 that is built toward speed. If Nebula or MAME slow you down then try out Kawaks.

V i v a n o n o is another one of those emulators that just came out of nowhere, which makes emulation kind of fun. It currently emulates the following Namco System 22 games: Ridge Racer, Ridge Racer 2, and Rave Racer.
